Heat a wok or deep frying pan over medium high heat. Finally, add the strips of fried steak and toss to heat through and coat with sauce. Beef is sliced very thin, marinated and then fried twice to get it nice and crispy. It's then tossed in a sweet, salty & sticky sauce.

  9. Prepare 4 spring onions, cut thin
  10. Prepare 1-1 1/2 C vegetable oil or coconut oil
  11. Make ready Soba or fettuccine noodles (I didn't have Soba noodles on hand)
  12. Prepare Fresh bean sprouts, if desired

Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Crunchy, crispy beef tossed in a super umami hot chili oil that is packed with fried shallot, chili flakes, and Sichuan peppercorns.

Instructions to make Crispy beef:
  1. Beat the eggs and add the flour and salt to make batter. Heat the oil in a wok type pan to medium high. Lightly coat the beef and then place in the pan. You have to do in batches because you can't overcrowd the meat in the pan. Cook about 3 minutes a side for a total of 6-7 minutes. The time will vary on how thin you have cut the meat. It should turn nice and brown. Set the meat aside.
  2. Remove all but 2 Tbsp of oil in the pan. Add in the vegies, chili sauce, honey and soy sauce. Cook this for 2-3 minutes on medium high and then add the meat back in and mix all together to get the meat warmed back up.
  3. Put on top of the noodles and serve.

Fry in the hot oil in small batches until crispy and golden brown; set aside.
