  2. Make ready Maple Sausage

  2. Cube cream cheese and add to eggs.
  3. In a gallon size zip lock bag, roll sausage flat and even until it takes the shape of the bag. Cut the sides open, a pull back. Place the scrambled eggs and cream cheese on the sausage, and add the cheddar cheese.
  4. On a piece of parchment paper, lay out the bacon and and form a basket weave 'blanket' (it's easier than you think)
  5. Using the zip lock bag, roll the sausage into a log, and place on bacon.
  6. Using the paper, roll bacon around the stuffed sausage log.
  7. Place Fatty on the grill, with indirect heat at 275º for 2 hours, or internal temp is 160º.
  8. Then place Fatty over heat to crisp bacon to your liking.
  9. Slice and enjoy!
