The ingredients needed to make Easy Fish Pie Filling:
  1. Get 400 g Frozen Fish Pie Mix
  2. Take 170 g Frozen Prawns (cooked or raw)
  3. Get 1 Cup White Wine
  4. Get 3 Large Cloves of Garlic
  5. Get 1/2 Large Onion finely diced
  6. Prepare 2 Small Carrots, peeled and finely diced
  7. Prepare 1 Cup Frozen Peas
  8. Take 1 Cup Boiling Water
  9. Get 1-2 Stock Cubes of Choice (I used 2 Chicken)
  10. Prepare Tsp Coarse Black Pepper
  11. Prepare 1/2 Tsp Dried Sage
Steps to make Easy Fish Pie Filling:
  1. Enjoy the frozen fish into a muslin cloth, hang overnight with a container underneath. This will remove any excess water. (You won't need to do this with fresh fish!)
  2. When fish has defrosted, pour away the excess water, you won't need this unless you want to use it in the stock. Empty the fish into a glass bowl, pour over the wine, crush and add the garlic. Stir well, cover with cling film and allow to marinate for approximately 8 hours.
  3. Chop the onion and carrots.
  4. In a pan, add 20g Butter and 2 Tbsp Olive oil. Heat on a medium setting and gently fry the onion and carrot. Add the peas.
  5. Prepare the stock (with 1 cup boiling water and 2 stock Cubes of choice) whilst the onions and carrots are softening.
  6. Drain the fish (keep the wine and garlic marinade) and add the fish to the pan. Continue to fry on a medium heat for a further 5 minutes.
  7. Add the stock and the wine marinade to the pan, also add the pepper and sage and simmer on a low heat for 1/2 an hour.
  8. When reduced, mix 1tbsp of flour (or thickener of choice) with a small amount of water to make a paste. Slowly pour into the mix, stirring continuously until desired thickness has been achieved.
  9. Check it suits personal taste and add salt/pepper if needs be. Cream or milk could also be stirred in at the end if desired.
  10. Pour into a glass oven dish and smother with mashed potato (I'm sure we all have our favourite way of making mash).
  11. Top with grated cheese and grill (optional).
  12. Eay and enjoy with a glass of white wine.
  13. We all love salt in our house, if you prefer a less salty taste, use 1 stock cube instead of 2!
  14. This recipe also works well with chicken.
