  1. Get FOR UTTAPAM BATTER:
  2. Get 2 cup idli rice
  3. Prepare 1/2 cup urad dal
  4. Make ready 1/2 tsp methi / fenugreek
  5. Take As needed water, for soaking & grindingwater
  6. Take as required oil, for roasting
  7. Prepare 2 tsp salt
  8. Prepare 1 onion, finely chopped
  9. Make ready 1 carrot, grated
  10. Make ready FOR MIX VEG TOPPING:
  11. Get 1/2 capsicum, finely chopped
  12. Make ready 1 inch ginger, finely chopped
  13. Get 1 tomato, finely chopped
  14. Make ready 1 chilli, finely chopped
  15. Take As required Few Curry leaves
  16. Make ready 2 tbsp coriander, finely chopped
  17. Get 1/4 tsp salt
Instructions to make Mix Vegetable Uttapam:
  1. INSTRUCTIONS - firstly, in a large bowl take 2 cup idli rice, ½ cup urad dal and ½ tsp methi. - soak for 8 hours adding water as required.
  2. Drain off the water and transfer to the mixi or grinder.
  3. Blend to smooth paste in batches adding water as required.
  4. Mix the rice-urad dal batter. - cover and ferment in a warm place for 8 hours. - after 8 hours, the batter has doubled in size. mix gently without disturbing the air bubbles.
  5. Further add 2 tsp salt and mix well. - prepare the vegetable topping by taking 1 onion, 1 carrot, ½ capsicum and 1 tomato.Also add 1 inch ginger, 1 chilli, few curry leaves, 2 tbsp coriander and ¼ tsp salt.
  6. Mix well making sure everything is well combined.
  7. Heat the griddle and pour a ladleful of batter.
  8. Spread out in a circular motion slightly thick than regular masala dosa.
  9. Top with mix vegetable mixture uniformly and pat slightly.
  10. Also pour 1 tsp oil around the edges. - cover and roast the dosa to a golden brown from the bottom.
  11. Flip over and roast both sides. - finally, enjoy mixed vegetable uttapam with chutney and sambar.
