Instructions to make Cauliflower fried "rice"!!:
  1. Break the cauliflower into small pieces and put them into a food procesor, blitz for a few seconds, until the mixture resembles like rice.
  2. Heat the oil and add the cauliflower rice. Cook for several minutes over medium heat stirring ocasionally, until the caulifliwer begins to turn just slightly golden brown.
  3. Add the garlic and vegetables and cook for 5 minutes.
  4. Make a well in rhe center of the pan and break the eggs. Break the yolks and scramble them gently, mix the other ingredients.
  5. Add the soy sauce and plenty black pepper. Mix well and serve warm!!
  6. I added chicken cut into pieces. (Optional)

Enjoy this low-carb favorite for a quick and easy weeknight meal! This "Cauliflower Fried Rice" is EXCELLENT (chef worthy)! I had imagined so many adaptations to the recipe before I had actually made it (i.e. marinate the meat; switch up the pork for a combination of pork, chicken, and shrimp; add hot pepper sauce and/or fresh grated ginger) but I don't think there is much. It is SO TASTY my kids thought it was real rice. Healthy, low carb, super light and flavourful.
