The ingredients needed to make Chickpea vegetable sauce:
  1. Take 100 g dried chickpeas
  2. Make ready 1 small onion
  3. Take 3-4 tsp garlic puree (or fresh cloves)
  4. Get 1 medium carrot
  5. Prepare 1/2 celerly stalk
  6. Prepare 1 tsp paprika
  7. Take 1/2 tsp dried parsley
  8. Get Salt and pepper to season

Add the tomato sauce, water, dried onion, stock cubes, basil, parsley and oregano and chile, if used. Then add the mushrooms, corn kernels, chickpeas and tuna. Would you like any vegetables in the recipe? Raita is an Indian yogurt sauce with cucumber and mint.

Instructions to make Chickpea vegetable sauce:
  1. Soak chickpeas in plenty if water overnight. Drain and rinse.
  2. Cook in a pan of water for 2 hours at a simmer until tender. Drain and allow to cool.
  3. Add carrot and onion to a pan with the oil and saute until softening. Add onion, garlic and cook for a further 5 minutes or until they begin to turn golden and the veg is tender. Season and add parsley and paprika and cook for 1 minute.
  4. Add chickpeas to the veg mix and 3 tbsp water and blend using a hand blender (or add to food processor). Blend until smooth.

Place chickpea mixture in a food processor, and process until smooth. Combine chickpea mixture, pasta, tomatoes, minced garlic, fresh parsley, and lemon juice; toss well.
