Prepare 3/4 cup Amarnath flour

Prepare 1/3 cup water

Make ready 2 cup chopped vegetables (broccoli, cauliflower, beans, jalapeño, olive, capsicum, carrot)
Make ready 2 tbsp tomato sauce
Make ready 1 chopped onion
Take 1 tbsp chopped garlic
Make ready 2 tbsp chopped coriander leaves

Take 1 tsp black pepper powder
Get 1 tsp turmeric powder
Get 1 chopped green chilli
Take 4 eggs
Make ready 3 tbsp Oil
Prepare as needed For garnish slice onion
Get 4 tsp Garlic pickle
Steps to make Healthy Amaranth Roll:
In a bowl take all types of flour, atta all the above ingredients, then add salt, oil mix well then add water and make a soft dough cover it for 10 minutes.
Heat 1 tbsp oil in a kadai, add chopped onion, chilli, garlic stir and cook for 2 minutes on low flame. Then add all the chopped vegetables, salt to taste, turmeric powder and chopped chilli mix well. Cover and cook for few minutes till tender and add chopped coriander leaves and tomato sauce mix well and keep aside for stuffing.
For roll again Knead the dough for one minute then divide it into 4 balls, make roti, heat a tawa make a roti add 1 tsp oil fry it both side then add one egg on the top of the roti season it, flip it add little oil fry 30 seconds again flip it to the other side stuff the vegetables and roll it, same process make all rotis and serve hot with onion and chilli pickle.
