The ingredients needed to make Pot Roast:
  1. Prepare 3.5 - 4 lbs Chuck roast
  2. Get 1 yellow onion large
  3. Make ready 6 - 8 carrots

  6. Prepare 1/3 cup balsamic vinegar
  7. Make ready 3 tbsps dijon mustard

Instructions to make Pot Roast:
  1. Pre-heat your oven to 300F and get your dutch oven ready
  2. Head your oil over high heat and brown your season chuck roast on all sides until a nice crust has developed - 3-5 minutes per side.
  3. Remove beef, add diced onion to pan and cook until softened, 5-7 minutes.
  4. Add balsamic, and reduce until it's a syrupy glaze and add dijon.
  5. Toss in thyme, and return beef to pan. Roast for 2 hours covered.
  6. Add carrots and potatoes and return to oven for another hour until everything is a tender mess. Serve family style.
