Mash the vegetables well and heat it up.Make a paste with sambar powder and little water and add it to the boiling sambar and add tamarind extract.Let it boil and add water to adjust the consistency if it becomes too thick.Let it boil for 5 mins.
Vada - Wash Urad dal and rice and Soak them in water for 4-5 hours.take out dal and rice from water and wash once again.Grind wet Dal and rice adding just a little water. There should be very less water in it. Do not grind Dal and rice into a very fine paste.put in salt, green chilli and dhaniya(coriander) to the grounded Dal then blend these well.you can give shape to this mixture using your hands or a plastic sheet.pour oil in a pan and deep fry.
Coconut chutney - To a blender add grated coconut, green chilies,curd, salt and water.Grind to a smooth paste. Transfer chutney to a large bowl. - For the tadka heat oil in a small pan on medium heat. Once the oil is hot, add the mustard seeds. Let them pop and then add the hing.add dal, red chilies. Stir for 30 seconds. Add curry leaves, stir and remove pan from heat.pour tadka into the bowl and mix it.
