  1. Preheat the oven to 180 degrees.
  2. In large mixing bowl or kitchenaid (flat mixer attachment) mix together the butter, brown sugar and granulated sugar.
  3. Then add the eggs one at a time and incorporate well.
  4. Add the flour, baking soda and salt. Mix thoroughly to incorporate the dough mixture.
  5. Then add the chocolate chip cookies. Let it all mix in well before adding the oats.
  6. Once all incorporated, add the oats and mix.
  7. Leave the cookie dough to rest for about 10 minutes or longer in the fridge.
  8. With a tablespoon, scoop and shape cookie dough into a round ball.
  9. Place on baking tray lined with parchment paper. Gently push down on the dough to flatten it slightly. Repeat step 7 until all of the cookie dough has been used.
  10. Bake cookie dough between 9-10mins. The cookies should look golden brown.
  11. Rest cookies on baking tray for 5-10 minutes before transferring onto a wire rack to cool down. - - Eat and enjoy cookies on its own, or with a cup of tea or hot glass of milk.
