If it is burning, add a little pasta cooking water or a squeeze of lemon juice. Our pasta nights always feature a big serving of vegetables on the side. I have this every single week at least once. Last night I threw this Tenderstem Broccoli, Chilli and Garlic Spaghetti together as I had a pack of Tenderstem Broccoli that needed using up.

To get started with this particular recipe, we have to first prepare a few components. You can cook broccoli, chilli and garlic pasta using 10 ingredients and 5 steps. Here is how you cook it.

The ingredients needed to make Broccoli, chilli and garlic pasta:
  1. Take 200-300 g broccoli (a couple of handfuls)
  2. Make ready chopped into even sized pieces (stalks and everything)
  3. Make ready Some olive oil
  4. Prepare 1 bulb wet garlic, sliced - optional
  5. Prepare 1-2 cloves garlic, peeled and crushed
  6. Get 1 red chill, chopped finely - chilli flakes are good to use instead
  7. Make ready 1 handful green olives or 1-2 tbsp capers
  8. Make ready some hazelnuts or pine nuts - roughly ground/ chopped
  9. Take salt and pepper
  10. Take Your pasta of choice

In a large skillet, combine broth, basil, pepper, garlic and broccoli. Toss the broccoli to coat with the oil. Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

Instructions to make Broccoli, chilli and garlic pasta:
  1. Boil a pan with lots of water and a pinch of salt. When it’s boiling, add the broccoli and cook until just tender - about 2-3 mins. When it’s ready, lift the broccoli out and keep the water for the pasta. Chop the cooked broccoli quite finely.
  2. Cook the pasta in the water used for the broccoli. (Bring it back to the boil, add a pinch more salt and cook the pasta according to the instructions.)
  3. In another pan, preheat about 1tbsp olive oil. Add the garlic and chilli. Sauté for a few mins.
  4. Add the chopped broccoli and the olives or capers. Sauté on a low- medium heat. Add a few splashes of the pasta cooking water. It’s ok for it to simmer for up to 5 mins.
  5. When the pasta is drained and ready, stir the broccoli mix through. Add the nuts. Season and add a splash of olive oil. Enjoy 😋

Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving. Last week I added the onion and also bacon that I chopped finely and crisped and sauteed the onion garlic and stems using a bit of the bacon grease along with the oil and butter. We've eaten something very similar in Roma and were amazed at how simply yet fantastic this was. The main ingredient is broccoli and again it must be fresh.
