Prepare 3 clove garlic, crushed and roughly chopped
Get 1 salt, to taste
Get 1 cracked black pepper to taste
Take 1/2 pinch chili powder, a little goes a long way with eggs
Take 1/2 cup grated cheese
Steps to make Kickin' Leftover Frittata:
Preheat oven to 180?
Combine eggs, garlic,salt, pepper and chili powder
Pour a small amount of egg mixture into a shallow casserole type dish just enough to cover the bottom. I used one measuring 10cm by 10cm, 6cm depth.
Layer the potatoes, aubergine and spring onion.
Add half of the chopped bacon
Layer the carrots and both capsicums
Spread the other half of the bacon on top.
Pour over the rest of the egg mix. don't forget to give it a stir first otherwise all your pepper will be in one spot.
Bake in oven for 25-30 minutes
Sprinkle over grated cheese and bake until golden. (10-15 mins)
Remove from oven and let stand for 5-10 minutes.
Cut and serve
