  7. Of course you can be creative and use any kind of vegetable you like.

Chicken - I used chicken thighs and breasts. You can use one or the other, or even drumsticks. Add the potatoes, onion, tomatoes, peppers, and olives to a large bowl, and the chicken to another. Cook a chicken breast in an infused liquid for a beautifully tender, lightly seasoned piece of meat that's perfect for adding to salads, soups and sandwiches. Remove the pan from the heat and scoop out the chicken breasts from the poaching liquid.
