The ingredients needed to make Stuffed Peppers:
  1. Prepare 5 Large Red Peppers
  2. Get 500 g Rice
  3. Take 120 g Minced Beef (Optional)
  4. Make ready Handful pine nuts
  5. Make ready 2 Garlic Cloves
  6. Prepare 1 x Tin Tomatos
  7. Prepare 2 x Bay Leafs
  8. Get 1 Tbsp Olive oil
Steps to make Stuffed Peppers:
  1. Mince the garlic and fry along with the bay leafs
  2. Add the pine nuts and the minced beef if using and fry until brown and loose
  3. Add the rice and fry for a couple of minutes
  4. Add the tin of tomatoes and fry for a further minute or so. You should end up with a thick coated rice
  5. Cut the top of the peppers and remove the seeds and pith.
  6. Stuff the peppers with the rice and beef, seal with tooth picks and wrap in tin foil.
  7. Place in the oven and cook for 1 hour at 200 Deg Centigrade
