  5. While still hot, generously season with your prepared coriander-salt (or any other flavour that takes your fancy!)

Peel the parsnips and use a peeler to cut them into long, thin strips. Drain the parsnip crisps on kitchen paper and season with sea salt ( JASON LOWE ). Immediately season generously with the sea salt, crushing it in your fingers as you sprinkle it on. Roast parsnips aren't good just for the Sunday roast. Once you have them done to a turn, you have opened the door to all sorts of hearty warm salads (try Peel the parsnips, quarter them lengthways and remove any tough, woody core.
