Get 1.5 kg Pork Belly with Skin

Preheat your oven to 230°C
Score the skin on the pork belly so it penetrates the fat a bit
In a pestle and mortar/ spice grinder, pound together the coriander seeds, Fennel seeds, black peppercorns, salt and bay leaf.
Mix the dry rub with the oil and lather onto the pork belly. Make sure to get some mixture into the cuts you made on the skin. Place into a dish and cover with cling film to marinate for a minimum of 30 minutes in the fridge.
Chop 2 onions into quarters and 1 garlic head in half horizontally. Lay them on the base of the baking dish skin side facing up. You do not need to remove any skins.
Place the pork on top of the onions and garlic and place the dish into your preheated oven for 45 minutes- 1 hour.
Take out the pork belly when it is crispy and golden. Then turn the oven down to 150°C.
Place the pork belly onto a rack suspended above a tray so that the pork fat will drip down through the meat and into the tray. Leave it in the oven for 2-3 hours and let it cook slowly until the meat is soft and tender.
